Weekend Recap

Ugh Mondays, is it Friday yet? As we sit in the office, I would like to think back and relive the weekend.

Started off the weekend with a volunteer fundraiser for Young Life. Free spin class and doing some good for the community- yes please!

Went to the Big City this weekend for some Russian Tea (recap to come).

Spent the evening at the Bulls Game with the fam and bf (not pictured).

Acupuncture date… so romantic- I know. If you have back, neck or any body part pain, you have to try it. Such a great way to alleviate pain naturally.

And of course the OSCARS! The fashion, Chris Rock and Leo FINALLY winning, made for one of the more entertaining shows.

Walk the Fringe

Channeling in my inner rockstar, wearing black on black with fringe detail. Fringe has been and will continue to be a trend that we’ll see. You’ll see fringe detail on just about everything from shoes to shirts to sleeves, it’s everywhere. The fringe lets you shake your thang with a little more oomph. This is how I styled this trend- hope ya like it!

Tasty Travels: GE Bistro

If you’re ever in the Chicagoland area and are looking for a great place to eat, check out Graham Elliot Bistro! Ryan and I went here last year and we’ve been dying to go back. The food, the service and ambiance is ridiculous. Not to mention you might get lucky and meet the one and only Graham Elliot (clearly I’m a fan).

First off their drinks are delicious and definitely have a kick. A few drinks will more than do the trick.

Their menu is seasonal and varies from time to time, but some of their staple must tries is the Caesar Salad and the Beef Stroganoff. Below are some of the items we tried.

Obviously we had to try the dessert and ordered the Cookie Sampler, baked cookies AND cookie dough- YES PLEASE

Lucky for us Graham was in the house (yes, we’re on first name terms). I almost died when I first saw him in the kitchen. He was so nice and was so involved with the whole restaurant process, from calling orders to running food to the table it was amazing to see him work. It was a real treat to meet him.

Best part of the evening was being able to spend it with this guy. IMG_9321

Definitely recommend G.E.B. when you get a chance, bonus they’re often featured on Groupon!

Wednesday Wish List

So I rarely buy things online because I’m old fashion and love touching and seeing the product in person, but I love to look online to see what deals are going on. I don’t know about you, but I can get sucked into online shopping for hours. Unfortunately I don’t have the budget or means to get everything I want. Below I’ve listed a few items that are on my wish list. Maybe some of them will come true (fingers crossed)!

  1. Burts Bees Lipstick: I’ve been seeing these EVERYWHERE and I’m dying to try them. I just read the best review on these and I’m sold. At $9.00 a pop, I think I might just have to get myself a few colors this weekend! (pic credit to: My Newest Addiction)
  2. Amuse Society “Kingsley Dress”: I love this ultra feminine dress. The color is ultra flattering and the ruffle detail is all the rage from this Springs NYFW. This would be a great piece to transition from late winter to spring and even summer. Throw on some over the knee boots and a ultra long cardigan now and wear with sandals in the summer.
  3. S’well Bottle: DYING to get this super chic water bottle that is also super functional as well. This water bottle can keep hot items hot for 12 hours and cold items cold for 24 hours! Best part is that this company gives back to society through Unicef. Do some good for yourself and others and get one now!
  4. Lululemon Urban Sanctuary Bag: This is the perfect weekender/workout bag. Amazingly functional as well as gorgeous. You’ll have plenty of space for all your necessities and then some. Lulu has the best details and this bag won’t disappoint.
  5. Van’s White Slip Ons: If you haven’t already please take a look at Damn Daniel, this kid has gone viral for his white Vans and now I want a pair myself! These are the original, but I’m thinking about getting these Leather Slip Ons for a more polished look. What are your thoughts?
  6. Zara Quilted Bomber Jacket: The Bomber Jacket is coming back with a vengeance. Seen throughout the streets in NYFW, this jacket can be worn so many different ways. I love the army green color of this jacket with gold zipper accents. This jacket I guarantee will fly off the shelves!
  7. Sole Society Tassel Faux Leather Crossbody Bag: Tassels have been on trend for awhile now, though not for the faint of heart. This bag makes it super easy to pull of this trend and at $54.95 it’s a steal.
  8. Ten Sixty Sherman ‘Hangry’ Graphic Muscle Tee: This shirt literally made me LOL. Hangry is my go to word and I always feel that way. Whoever wants to get me this just because, I’d love you forever 😉
  9. Cole Haan Coat: This jacket is 50% off. Enough said.

Skinny Asian Pasta Salad

I normally don’t cook Asian cuisine (even though I’m Asian), but I was inspired when I went to Trader Joes over the weekend when I saw an Asian Noodle to-go meal and wanted to recreate my own with a healthier twist.

What I love about this recipe is that you can literally dump any vegetables you have in your fridge and make your own version. Its super simple, is packed full of vegetables and tastes great leftover.

Below is what I used in my version.

Raw Ingredients

  • 1 pack shredded green cabbage from Trader Joes
  • 1 seedless cucumber- peeled and thinly sliced
  • 2 carrots- peeled and julienned
  • 1 cup cilantro chopped

Ingredients to be Cooked

  • 3 medium size Shitake mushrooms- thinly sliced
  • 1 pack edamame- pre-cooked and shelled
  • 2 cups broccoli- chopped into bite size pieces
  • 2 cans baby corn- drained and chopped into bite size pieces
  • 2 cups green beans- cut into bite size pieces
  • 1 pack noodles (spaghetti or angel hair)

 

Instructions

  1. Boil package of noodles until they’re al dente. Drain and rinse with cold water to stop further cooking. Transfer into a large mixing bowl add some olive oil or sesame oil to it so that noodles don’t stick
  2. Quickly sauté your veggies that you want cooked. Cook on high with your choice of cooking oil and a pinch of salt. Let your veggies cool
  3. Transfer all your raw and cooked ingredients to your mixing bowl with your noodles.
  4. Add your sauce and give it a good mix. Top with Cilantro

Extra Saucey Spicy Lime Sauce

  • 3 cloves garlic- minced
  • ¼ cup ginger- peeled and minced
  • 2 Tablespoons of a Chili-Garlic sauce (or more if preferred)
  • 1 ½ Tablespoons of Honey
  • 3 Tablespoons of low sodium soy sauce or coconut aminos or whatever soy alternative you like you use
  • 1 ½ Tablespoons of Rice Vinegar
  • 1 Lime- juiced

Directions: Add all the ingredients together and whisk until combined. Feel free to make extra sauce or adjust to your taste!

Serve warm or cold. This would also be awesome with some tofu, chicken, shrimp, nuts, or steak. Enjoy!

Fitness Tips

My dog is my best yoga buddy

Day 22 in my 30-day yoga challenge and I still leave feeling inspired. Today’s message was that nothing lasts forever- not your pose, workout, time or your current situation in life. Change is inevitable, but you have the power to make the change you want. No matter what situation is bringing you down or if you’re at your lowest low, what is most important is how you get back up. That is the true test.

In regards to my physical journey, I’ve always made excuses for myself. That I was born this way, that it was genetics, and that I will always be that bigger. It wasn’t until I decided to take action and actually tried to get healthier that I began seeing results.

Few changes I made were planning out my workouts and creating a good support team.

I used to go to the gym and just wing it, with no routine. Without a purpose, my workouts were unproductive. I thought that I was “putting in the work” based off the amount of time that I spent there, but I would rarely leave feeling tired or accomplished.

I downloaded the Beach Body Guide (BBG) by Kayla Itsines and it really has done wonders. Not only are the workouts great, but I love that it’s scheduled Monday, Wednesday, and Friday with set times for each set. The program makes you feel accountable, especially when you follow her on Instagram and the BBG community.  On the off days you’re supposed to do some sort of cardio, and I found that the Couch to 5k program was perfect to sub in during those days.

Other ways to create your own routine is to follow other fitness people on Instagram or Facebook. Often times you’ll find workout video clips of their routines, just make sure that you write it down and understand the moves prior to going to the gym.

Use social media to your advantage, as inspiration and accountability. I love SnapChatting funny faces after a hard workout so that my friends know that I’m working hard.

It’s important to surround yourself with friends that are supportive and that might even be taking on a fitness journey of their own. You can put together a Google Document to record food, workouts and progress. Make it more motivating by starting a challenge, putting money on the line definitely ups the stakes. It’s important to remember at the end of the day that you’re there to support and help each other and that you want everyone to succeed.

It’s never too late to start and remember you can do anything if you set your mind to it.

Warm Front

We’re finally supposed to have a warm weekend here in the Midwest, crazy to think that it snowed just last weekend.

In honor of the warm weather (hopefully it stays), I’m showing off one of my favorite outfits to welcome Spring.

For me this outfit is all about the details. I love the mix of the lace top along with the high low skirt. Olive green is a great color to incorporate into your wardrobe as it’s extremely flattering on all skin tones.

Stay Strong Be Fierce

I’ve always said that when I start my blog that I would leave everything on the table. Simply Average means that I’m struggling with the same issues that everyone else is and I want to share my struggles with you.

For me my weight has always been my biggest cause for insecurity and self hate. My weight has always flexed up and down and rapidly. It’s been something I’ve struggled with ever since I hit puberty. I feel extreme pressure due to my family and culture. Asian women are typically seen as petite and skinny, and I’m none of those things. Ever since I could remember my family and family friends have been telling me how much prettier I would be if I lost a few pounds or how clothes would look nicer and that I could wear this or that if I thinner. This added pressure was something I almost revolted against, I didn’t want them to see how insecure I was about the way I looked.

Being heavier wasn’t because I hated exercise and that I hated eating healthy, I’ve always been competitive and pretty athletic and I’ve always loved vegetables and fruit. I’ve just never known balance. I love food more than anyone I know and never could say no. I would always say that I worked out or that I’ll compensate for my consumption some other way.

It wasn’t until last year after I hurt my back, so badly that I could barely walk let alone work out that I realized that this is the only body that I’ll ever have. I was terrified that at 20-something I might not be able to run another ½ marathon or participate in the things that I love to do. That’s when I started really reevaluating my body and my health.

I want to love my body for what it allows me to do. To be able to go on hikes, runs, vinyasa and just be active is a luxury that we take for granted. I learned more about how to feed my body and what it needs to recover and grow. That food is fuel not just something delicious and it’s changed my life.

With this new found perspective, I no longer worry about the numbers on the scale or what size pants I’m in, I just want to be the strongest and healthiest person I can be. With my back starting to act up again, I just wanted to share my struggle and remind myself and to any of those reading to be patient with your body. It’s amazing what the body is capable of and what we do to help our body will pay off.

I’m far from where I want to be, but I’m making progress everyday. I love where I am and I’ve never felt more confident or proud of myself. Remember it’s never to late to start. DIY Chipotle

Chipotle is one of my favorite places to eat, just please no E.Coli. Thankfully it’s easy enough to duplicate at home and make a healthier version, with a few different recipes.

My favorite choice of meat is steak, it’s what I always order when I order a bowl or salad from Chipotle. This steak recipe is one of my favorites and could be used for anything from fajitas, steak bowls, steak salads, tacos, etc. Best of all, you can use a cheaper cut of meat and it’ll taste super flavorful and tender.

Recipe makes 4 servings, with plenty of leftovers

Ingredients for Steak:

  • 4 lbs. of Flank Steak, trimmed
  • 1 can of Ro*Tel Tomatoes Original
  • 2 Tablespoons Worcestershire Sauce
  • ½ cup Cilantro, chopped
  • 2 Limes, juiced
  • 2 cloves Garlic, minced
  • Salt to taste
  • Pinch of Cumin

Directions:

Mix all ingredients together and allow to marinade for at least 30 minutes. I like to do this in a zip-lock bag overnight if I have time, if not I mix it together in a bowl and make sure all ingredients are mixed properly.

Cook on the grill or grill pan, make sure it’s hot so you get a nice sear. Cook for 5-7 minutes on each side, depending on how thick your piece of meat is. I like mine medium rare, so when I reheat it, the meat doesn’t overcook.

Once you’re done cooking the meat, place the meat on a plate and let it rest for 10 minutes.

Easy Guacamole Recipe

  • 3 Ripe Avocados, scooped out/pits removed
  • ¼ cup Red Onion or White Onion, diced
  • ½ Jalapeno, diced (add more if preferred)
  • 1 clove Garlic, minced
  • ½ cup Cilantro, chopped
  • 1 Lime, juiced (add more if needed)
  • Salt to taste

Directions:

Add all the ingredients to a mixing bowl, except the salt. Mix with a fork (I prefer mine chunky so take it slow). Once all the ingredients are mixed roughly, add a pinch of salt and mix and add until it’s your preferred taste and texture.

Pico de Gallo

Ingredients:

  • 4 medium Tomatoes, diced
  • 1 clove Garlic, minced
  • ¼ cup Cilantro, chopped
  • ¼ cup Red Onion or White Onion, diced
  • 1/2 Jalapeno, diced (add more if preferred)
  • 1 Lime, juiced (more if preferred)
  • Pinch of Cumin
  • Salt to taste

Direction:

Thoroughly mix all the ingredients together, add any extra ingredient portions if you’d like. You can prepare this ahead of time.

Fajita Mix

  • 4 Bell Peppers, sliced
  • 1 small Red Onion or White Onion or BOTH, sliced
  • ¼ cup chopped cilantro
  • ½ lime juiced
  • Olive Oil
  • Salt to taste

Heat olive oil in a large pan, once the pan is hot add the bell peppers, onion and salt and sauté till tender, approximately 5 minutes. Turn off the heat and add cilantro and squeeze of lime juice and toss.

Now that you have all those parts completed, you can use them anyway you like it. Make a taco with corn tortillas, burrito bowl with lettuce and quinoa, or a salad (my favorite).

Weekend Recap

Hello Loves-

I hope you had a great long weekend! Fortunately enough for me I had Monday off due to President’s Day and was able to enjoy Valentine’s Day to the fullest. Below is a recap of my weekend in photos.

Then we were off to the Blackhawks Game (my first one ever!). Seriously an amazing time and worth the ticket price. We had so much fun and got to see friends and coworkers.

Sunday & Valentine’s Day: Started off with a brewery tour out in Geneva. Highly recommend the Penrose for a tour and tasting, the beer is tasty and they give a really in-depth brewery tour.

Had a mediocre lunch, but thankfully the decor was pretty and my date was pretty great.

Ended the night with a family outing to King Spa Sauna in Niles, definitely something worth checking out with friends, family or significant others. It’s an Asian style bath house and sauna. It’s a really neat experience and super relaxing.

Ryan and I tried these on last summer and Nordstrom, I’ve been on the hunt FOREVER for sunnies because it’s not easy to find sunglasses that fit my Asian face. These were a little high on the price range, so I walked away. I can’t believe he remembered these and got them for me as a gift. I told you he’s special.
